Start with a small serving

An affogato is a very good argument for keeping vanilla ice cream in the freezer. Pour the hot coffee, pick up your spoon and enjoy it while some of the ice cream is still cold and firm. This is one dessert that does not benefit from waiting for the perfect photograph.

For one serving, put approximately 70 g vanilla ice cream or gelato in a small heat-safe bowl or cup. Prepare 30 ml espresso, or the same volume of strong moka-pot coffee. Have a spoon ready before you pour: the contrast between frozen ice cream and warm coffee is part of the experience.

If filter coffee is what you have, start with 20 ml of a strong brew. It makes a different, gentler dessert and is a useful variation. Adding a full mug of coffee will turn the result into a float rather than the small dessert described here.

Pour and serve

Scoop the ice cream first and leave it in the freezer while you prepare the coffee. Bring it out just before serving. Pour the freshly prepared coffee around and partly over the scoop, then serve immediately. Let each spoonful catch some ice cream and some coffee instead of mixing everything into a uniform liquid.

For guests, set out the bowls and spoons ahead of time and prepare each coffee close to serving. You can serve the coffee in a separate small jug so each person decides how much to pour. Use vessels intended for hot liquid, even though the dessert starts cold.

Choose one variation

Try decaffeinated coffee for an evening version, or use a dairy-free vanilla frozen dessert. Different products melt and sweeten the coffee differently, so change the frozen base before changing all the quantities. Chocolate shavings are optional; add a small pinch after pouring if you want another texture.

Taste the basic version before adding sweetener. Ice cream already brings sweetness, and a bitter coffee does not necessarily need a larger scoop. Keep a note of the combination you like. This is an adaptable serving suggestion, not a claim that one roast or one machine produces the definitive affogato.
